Reading: Today’s reading is a more detailed discussion of carbohydrates and their properties by Dr. John W. Kimball, a former Harvard professor of immunology. He was one of the first instructors to replace his textbook with a more flexible, interactive, online learning resource.

Don’t try to memorize every detail from today’s reading (unless you want to be a biochemist). You should come away with a general understanding of what is meant by carbohydrates, monosaccharides, disaccharides, polysaccharides, glycogen, and cellulose.
